  • 2 tablespoons red apple vinegar
  • 1/3 cup drained pepperoncini peppers
  • 1/3 cup grated parmesan cheese
  • 8 slices cooked turkey bacon, crumbled
  • 1/2 chopped red onion
  • 1 cup halved grape tomatoes
  • Spices: salt, oregano, Italian herbs, garlic powder, crushed red pepper

Instructions

  1. Cook the frozen cheese tortellini in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, whisk together mayonnaise, red apple vinegar, salt, oregano, Italian herbs, garlic powder, and crushed red pepper until smooth.
  3. Add the cooked tortellini to the dressing along with pepperoncini peppers, grated parmesan cheese, chopped red onion, crumbled turkey bacon, and halved grape tomatoes. Gently fold until well combined.
