- 4 flour tortillas (8-inch size)
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- Fresh herbs (parsley and optional oregano or basil)
- Olive oil
- Garlic
- Lemon juice
Instructions
- Prepare the vegetables by chopping spinach, halving tomatoes, and dicing onion.
- In a mixing bowl, combine spinach, tomatoes, onion, garlic, herbs, feta, mozzarella, lemon juice, and black pepper.
- Heat olive oil in a non-stick skillet over medium heat.
- Assemble each quesadilla by placing about 3/4 cup of filling on one half of the tortilla; fold and press gently.
- Cook each quesadilla for 4–5 minutes per side until golden brown and cheese is melted.
