Ingredients
- 20 oz fresh cheese tortellini
- 1.5 cups cherry tomatoes
- 1.5 cups cucumbers
- 1 cup canned artichoke hearts
- 1 cup olives
- ½ red onion
- 1 cup crumbled feta cheese
- ½ cup olive oil
- 1/3 cup red apple vinegar
- 3–4 tablespoons white sugar
- 2 teaspoons Dijon mustard
- 3 teaspoons minced garlic
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon salt
- Juice of 1 lemon
- Pinch of red pepper (optional)
Instructions
- Cook the tortellini in boiling water according to package directions until al dente. Drain and cool.
- In a small bowl, whisk together olive oil, red apple vinegar, sugar, Dijon mustard, minced garlic, oregano, basil, salt, and lemon juice.
- In a large mixing bowl, combine the cooked tortellini with cherry tomatoes, cucumbers, artichokes, olives, red onion, and half of the feta cheese. Pour the dressing over the salad and toss gently to coat.
- Garnish with remaining feta cheese and chill in the refrigerator for at least two hours before serving.
