Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup lime juice
- 2 teaspoons minced garlic
- 2 tablespoons olive oil
- 1 teaspoon salt
- pinch cayenne pepper
- 1/8 cup agave syrup
- 1 1/2 ripe mangoes, diced
- 1–2 jalapeno peppers, minced
- 1/2 green pepper, diced
- 1/4 cup sweet onion, diced
- 1/4 cup red onion, diced
- 2 tomatoes, diced
- 1/4 cup chopped fresh cilantro
Instructions
- In a mixing bowl, combine lime juice, minced garlic, olive oil, salt, and cayenne pepper. Add chicken breasts and marinate for at least 15 minutes.
- Prepare the mango salsa by mixing diced mangoes (reserve some for topping), jalapenos, green pepper, sweet onion, red onion, tomatoes, cilantro, and agave syrup in another bowl. Mix well and let sit to meld flavors.
- Preheat grill or grill pan over medium heat. Remove chicken from marinade and discard excess marinade. Grill chicken for approximately 6-7 minutes per side until fully cooked (internal temperature reaches 165°F).
- Serve grilled chicken topped with a generous portion of mango salsa.
