  • 2 ripe peaches
  • 8 ounces leafy greens (arugula, spinach, or butter lettuce)
  • 1/4 cup red onion
  • 1 cup cherry tomatoes
  • 1 avocado
  • 4 ounces goat cheese
  • 1/3 cup pistachios
  • Olive oil
  • Apple cider vinegar
  • Honey
  • Dijon mustard
  • Kosher salt
  • Fresh basil

Instructions

  1. Preheat the grill or grill pan over medium heat. Brush peach wedges lightly with olive oil.
  2. Grill peaches for about 3 minutes on each side until charred. Set aside to cool slightly.
  3. In a mixing bowl, combine leafy greens, sliced red onion, halved cherry tomatoes, diced avocado, crumbled goat cheese, and chopped pistachios. Toss gently.
  4. For the basil vinaigrette, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, kosher salt, and fresh basil until smooth.
  5. Add grilled peaches on top of the salad mixture and drizzle with vinaigrette before serving. Toss gently to combine.
