- 2 ripe peaches
- 8 ounces leafy greens (arugula, spinach, or butter lettuce)
- 1/4 cup red onion
- 1 cup cherry tomatoes
- 1 avocado
- 4 ounces goat cheese
- 1/3 cup pistachios
- Olive oil
- Apple cider vinegar
- Honey
- Dijon mustard
- Kosher salt
- Fresh basil
Instructions
- Preheat the grill or grill pan over medium heat. Brush peach wedges lightly with olive oil.
- Grill peaches for about 3 minutes on each side until charred. Set aside to cool slightly.
- In a mixing bowl, combine leafy greens, sliced red onion, halved cherry tomatoes, diced avocado, crumbled goat cheese, and chopped pistachios. Toss gently.
- For the basil vinaigrette, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, kosher salt, and fresh basil until smooth.
- Add grilled peaches on top of the salad mixture and drizzle with vinaigrette before serving. Toss gently to combine.
