Ingredients
- 2 pounds fresh peaches
- 8 ounces feta cheese
- ¾ cup Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons fresh mint leaves, chopped
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon red pepper flakes
- ⅔ cup canola oil
- 1½ tablespoons shallot, minced
- 1 tablespoon maple syrup
- 1 tablespoon rice apple vinegar
- 1 tablespoon honey
- 1½ teaspoons Dijon mustard
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon salt
Instructions
- Preheat grill to 375°F (190°C).
- Halve and pit the peaches, then grill cut-side down for 4-5 minutes until marked.
- Flip and grill for another 4-5 minutes. Set aside to cool.
- In a mixing bowl, blend feta and Greek yogurt using a whisk until creamy; drizzle in olive oil while mixing.
- Combine lemon zest, juice, shallots, maple syrup, vinegar, honey, Dijon mustard, salt, and pepper in another bowl.
- Serve by layering whipped feta on a platter topped with grilled peaches and dressing.
