  • 1 teaspoon red pepper flakes
  • ⅔ cup canola oil
  • 1½ tablespoons shallot, minced
  • 1 tablespoon maple syrup
  • 1 tablespoon rice apple vinegar
  • 1 tablespoon honey
  • 1½ teaspoons Dijon mustard
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon salt

Instructions

  1. Preheat grill to 375°F (190°C).
  2. Halve and pit the peaches, then grill cut-side down for 4-5 minutes until marked.
  3. Flip and grill for another 4-5 minutes. Set aside to cool.
  4. In a mixing bowl, blend feta and Greek yogurt using a whisk until creamy; drizzle in olive oil while mixing.
  5. Combine lemon zest, juice, shallots, maple syrup, vinegar, honey, Dijon mustard, salt, and pepper in another bowl.
