- 2 cups all-purpose flour (or gluten-free blend)
- ½ cup confectioners' sugar
- 1 cup cold butter (or coconut oil)
- 1 large egg yolk (or egg replacer)
- 8 oz almond paste (or marzipan)
- ¼ cup butter (or dairy-free spread)
- 1 large egg white (or aquafaba)
- 1 teaspoon almond extract
- Apricot preserves
Instructions
- In a mixing bowl, combine flour and confectioners' sugar. Cut in cold butter until crumbly.
- Add egg yolk and ice water; mix until combined. Chill dough for at least 30 minutes.
- Preheat oven to 350°F (175°C). Roll out chilled dough and cut circles for tartlet pans.
- Press dough into pans and prepare filling by beating almond paste with butter, then adding egg white and extract.
- Spoon filling into crusts and bake for about 25 minutes until golden brown.
- Cool before serving and enjoy warm or at room temperature.
