Ingredients
- 3 large eggs
- 1 cup buttermilk
- 1 cup milk
- ½ cup sour cream
- 2 tablespoons honey
- 1 ½ cups yellow cornmeal
- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ¾ teaspoon baking soda
- 2 tablespoons granulated sugar
- ¾ teaspoon fine sea salt
- 4 tablespoons unsalted butter (melted)
- 8 ounces fresh or canned sweet corn (drained and rinsed)
- 12–13 pieces cooked Turkey Turkey Bacon (diced)
- 2 cups sharp cheddar cheese (grated, separated)
- 4 jalapeños (diced; seeds and membranes removed for less spice)
Instructions
- Preheat your oven to 375°F and grease a 9×13-inch baking dish.
- In a medium bowl, whisk together the eggs, buttermilk, milk, sour cream, and honey until well combined.
- In a large bowl, mix together the cornmeal, flour, baking powder, baking soda, sugar, and salt.
- Create a well in the dry mixture and pour in the wet ingredients; stir gently until just combined.
- Gradually fold in melted butter followed by sweet corn, diced turkey bacon, cheese (reserve some for topping), and jalapeños.
- Pour batter into the prepared dish and top with remaining cheese.
- Bake for about 30-40 minutes or until golden brown and edges start pulling away from the pan.
- Cool on a wire rack before serving.
