  • 1 1/4 cups (177g) all-purpose flour
  • 1 1/4 cups (110g) old fashioned rolled oats
  • 1/2 tsp (heaping) salt
  • 1/2 tsp baking soda
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light-brown sugar
  • 3/4 cup (170g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 1 Tbsp lemon zest
  • 1/3 cup (80ml) fresh lemon juice
  • 2 large egg yolks
  • 1/2 tsp lemon extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, whisk together flour, oats, salt, and baking soda. Stir in both sugars until clumps disappear.
  3. Mix melted butter with vanilla in another bowl and combine with dry ingredients until moistened.
  4. Press half of the crumb mixture into a greased 8×8 baking dish and bake for 15 minutes until lightly golden.
  5. In another bowl, whisk sweetened condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract until well mixed.
  6. Pour the lemon filling over the baked crust and sprinkle remaining crumb on top.
  7. Bake for an additional 23-26 minutes until golden.
  8. Allow to cool at room temperature before refrigerating for at least 30 minutes. Cut into squares and serve chilled.
