- 1 cup unsalted butter (softened)
- 1½ cups granulated sugar
- 8 egg yolks
- 1⅓ cups crushed fresh mandarin oranges
- 1½ teaspoons vanilla extract
- ¾ cup milk
- 2 cups cake flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- Topping: 2 cups heavy cream
- ½ cup powdered sugar
- 16 ounces crushed fresh pineapple
- 3.4 ounces vanilla pudding mix
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Crush the mandarin oranges in a food processor until smooth.
- In a large bowl or stand mixer, cream together the softened butter and sugar until light and fluffy. Beat in egg yolks, crushed mandarin oranges, and vanilla extract until well combined.
- In another bowl, sift together cake flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture while alternating with milk until just combined.
- Pour batter evenly into prepared pans and bake for 25-28 minutes or until cakes spring back when lightly touched. Cool in pans for about 20 minutes before transferring to a cooling rack.
