  • 1⅓ cups crushed fresh mandarin oranges
  • 1½ teaspoons vanilla extract
  • ¾ cup milk
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • Topping: 2 cups heavy cream
  • ½ cup powdered sugar
  • 16 ounces crushed fresh pineapple
  • 3.4 ounces vanilla pudding mix

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Crush the mandarin oranges in a food processor until smooth.
  3. In a large bowl or stand mixer, cream together the softened butter and sugar until light and fluffy. Beat in egg yolks, crushed mandarin oranges, and vanilla extract until well combined.
  4. In another bowl, sift together cake flour, baking powder, and salt.
