  • 6 cups boiling water
  • 4 tablespoons unflavored plant-based gelling agent
  • 3 cups whole milk (or plant-based alternative)
  • 14-ounce can sweetened condensed milk (or dairy-free version)
  • 2 cups half-and-half (or plant-based alternative)
  • 1½ teaspoons vanilla extract

Instructions

  1. Coat three 8-inch square pans and one 9 × 13-inch baking pan with cooking spray.
  2. In separate bowls, mix flavored vegan gelatin with boiling water and pour into greased pans. Refrigerate until set (2-3 hours).
  3. In a saucepan, combine unflavored gelling agent with water; allow it to bloom before heating gently and adding milk, sweetened condensed milk, and vanilla. Stir until smooth.
  4. Cut set jello into cubes and mix in the larger pan; pour creamy mixture over cubes.
  5. Chill in the refrigerator for at least 3 hours or overnight before serving.
