Instructions
- Season the ribeye steaks generously with coarse sea salt and refrigerate for up to 2 hours.
- Remove from the fridge 1 hour before cooking to allow them to reach room temperature.
- Sprinkle cracked black pepper evenly over both sides of the steaks.
- Preheat your pellet grill or smoker to 200°F.
- Smoke the steaks directly on the grate until they reach an internal temperature of 120°F (about 20-30 minutes).
- Increase heat to 500°F, then sear the steaks for about 6-9 minutes per side until reaching desired doneness.
- Let rest for 10 minutes before slicing and serving.
