Ingredients
- 1 cup old-fashioned rolled oats
- 1/4 cup ground flaxseed
- 1/4 cup sliced almonds (chopped)
- 2 tablespoons chia seeds
- 1/8 teaspoon cinnamon
- a pinch of salt
- 1/4 cup + 2 tablespoons creamy peanut butter (melted and slightly cooled)
- 1/4 cup + 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- 2 tablespoons mini chocolate chips
- 1/4 cup ground peanuts or ground almonds (to roll the balls in)
Instructions
- In a large bowl, mix together oats, almonds, flaxseed, chia seeds, salt, and cinnamon until well combined.
- Melt peanut butter in the microwave for about 30 seconds, then let cool slightly before mixing in honey and vanilla extract.
- Pour the peanut butter mixture over the dry ingredients and mix until thoroughly combined. Fold in mini chocolate chips.
- Roll into golf-ball-sized bites and coat with ground peanuts or almonds.
- Chill in the refrigerator for at least 30 minutes before serving.
