  • 2 tablespoons chia seeds
  • 1/8 teaspoon cinnamon
  • a pinch of salt
  • 1/4 cup + 2 tablespoons creamy peanut butter (melted and slightly cooled)
  • 1/4 cup + 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips
  • 1/4 cup ground peanuts or ground almonds (to roll the balls in)

Instructions

  1. In a large bowl, mix together oats, almonds, flaxseed, chia seeds, salt, and cinnamon until well combined.
  2. Melt peanut butter in the microwave for about 30 seconds, then let cool slightly before mixing in honey and vanilla extract.
  3. Pour the peanut butter mixture over the dry ingredients and mix until thoroughly combined. Fold in mini chocolate chips.
  4. Roll into golf-ball-sized bites and coat with ground peanuts or almonds.
  5. Chill in the refrigerator for at least 30 minutes before serving.
