Ingredients

  • 1/2 cup honey
  • 1 teaspoon salt
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon whole peppercorns
  • 1/2 teaspoon coriander seeds
  • 1 pint fresh strawberries (about 12-16)

Instructions

  1. In a small saucepan, combine the vinegar, honey, salt, mustard seeds, peppercorns, and coriander seeds. Heat over high until boiling, then remove from heat and let steep for 10 minutes.
  2. Trim the strawberry stems and place them in a mixing bowl. Allow the pickling liquid to cool before pouring it over the strawberries.
  3. Cover the bowl and refrigerate for at least 2 hours (or up to 24 hours) to allow the flavors to meld.
  4. Serve on top of grilled beef or as a topping for crackers with cream cheese.
