- 1 cup white vinegar (or apple cider vinegar)
- 1/2 cup honey
- 1 teaspoon salt
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon whole peppercorns
- 1/2 teaspoon coriander seeds
- 1 pint fresh strawberries (about 12-16)
Instructions
- In a small saucepan, combine the vinegar, honey, salt, mustard seeds, peppercorns, and coriander seeds. Heat over high until boiling, then remove from heat and let steep for 10 minutes.
- Trim the strawberry stems and place them in a mixing bowl. Allow the pickling liquid to cool before pouring it over the strawberries.
- Cover the bowl and refrigerate for at least 2 hours (or up to 24 hours) to allow the flavors to meld.
- Serve on top of grilled beef or as a topping for crackers with cream cheese.
