Ingredients
- 1 pound rotini pasta
- 1/2 cup sour cream
- 1/2 cup BBQ sauce
- 1/2 cup ranch dressing
- 14.5-ounce can black beans (drained and rinsed)
- 2 cups cherry tomatoes (halved)
- 1 sweet onion (chopped)
- 1 tablespoon cider vinegar
- 1 teaspoon sugar
- salt and pepper to taste
Instructions
- Cook the rotini pasta in a large pot of salted boiling water according to package directions. Reserve about one cup of the starchy cooking liquid before draining the pasta.
- In a mixing bowl, combine sour cream, BBQ sauce, ranch dressing, mayonnaise, black beans, chopped onion, halved cherry tomatoes, sugar, and cider vinegar. Mix until well combined.
- Allow the cooked pasta to cool for about five minutes before adding it to the mixing bowl. Stir gently to combine all ingredients evenly.
- Gradually mix in some reserved pasta water until reaching your desired creamy consistency.
