  • 2 stalks celery (diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (diced)
  • 2 pounds ground beef (10% – 15% fat)
  • Salt and pepper to taste
  • 1/3 cup catsup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons vinegar
  • 1 tablespoon dried thyme
  • 2 eggs (lightly beaten)
  • 1 cup panko bread crumbs

Instructions

  1. Preheat your oven to 350°F.
  2. Heat oil in a frying pan over medium-high heat. Sauté diced onion and celery until tender, about 5–6 minutes. Add garlic and cook until fragrant; remove from heat.
  3. In a large mixing bowl, combine ground beef with salt and pepper. Add the sautéed vegetables, catsup, Dijon mustard, vinegar, thyme, beaten eggs, and panko bread crumbs. Mix until just combined.
  4. Transfer the meat mixture into a loaf shape in a baking dish or loaf pan.
  5. For the glaze: In a small bowl, mix together catsup, Dijon mustard, Tabasco sauce, and brown sugar. Spread over the meatloaf.
  6. Bake for approximately 50 minutes or until an internal thermometer reads 160°F.
