- 1 packet (2 1/4 teaspoons) instant yeast
- 1 tablespoon light brown sugar
- 1 1/2 cups warm water (about 110°F)
- 1 tablespoon cooled melted butter or neutral oil
- 3/4 teaspoon fine sea salt
- 4 ¼ cups all-purpose flour
- 6 cups water (for boiling)
- 1/4 cup baking soda
- Pretzel salt or coarse sea salt (for topping)
Instructions
- In a bowl, combine warm water, yeast, and brown sugar; let sit until foamy (about 5 minutes).
- Add melted butter (or oil), salt, and flour; mix until dough forms.
- Knead on a floured surface for 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour or until doubled.
- Preheat oven to 450°F. Boil water and add baking soda.
- Shape risen dough into small balls (about 80). Boil each ball for about 30 seconds before placing on parchment-lined baking sheets.
- Brush with egg wash and sprinkle with salt before baking for about 12-15 minutes until golden.
