  • 1 ½ cup almond flour
  • ¼ cup butter (salted)
  • 4 large eggs
  • 1 cup heavy cream
  • 6 oz baby spinach
  • 1 cup onion (finely chopped)
  • 1 cup feta cheese (crumbled)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 2 tsp olive oil (or more if you like)

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine almond flour, salt, and garlic powder. Melt butter and mix into the dry ingredients until combined. Press into an 11"-12" pie dish.
  3. Pre-bake crust for about 10 minutes to set.
  4. Sauté onions in olive oil until softened, then add spinach until wilted.
  5. In a bowl, whisk together eggs, cream, salt, and pepper until frothy.
  6. Layer half of spinach-onion mixture and half of feta in the crust; pour half of the egg mixture over it. Repeat layers and finish with remaining feta.
  7. Bake on the lower oven rack for 30 minutes; move to upper rack for an additional 15 minutes until set.
  8. Cool slightly before slicing and serve warm.
