- 1 ½ cup almond flour
- ¼ cup butter (salted)
- 4 large eggs
- 1 cup heavy cream
- 6 oz baby spinach
- 1 cup onion (finely chopped)
- 1 cup feta cheese (crumbled)
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- 2 tsp olive oil (or more if you like)
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, combine almond flour, salt, and garlic powder. Melt butter and mix into the dry ingredients until combined. Press into an 11"-12" pie dish.
- Pre-bake crust for about 10 minutes to set.
- Sauté onions in olive oil until softened, then add spinach until wilted.
- In a bowl, whisk together eggs, cream, salt, and pepper until frothy.
- Layer half of spinach-onion mixture and half of feta in the crust; pour half of the egg mixture over it. Repeat layers and finish with remaining feta.
- Bake on the lower oven rack for 30 minutes; move to upper rack for an additional 15 minutes until set.
- Cool slightly before slicing and serve warm.
