- 1 cup old fashioned rolled oats
- 2 medium overripe bananas
- 2 eggs
- 1 tsp baking powder

- ⅓ cup chopped strawberries (plus sliced strawberries for topping)
- ¼ cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (180°C).
- In a blender, combine rolled oats, overripe bananas, eggs, baking powder, and ground cinnamon. Blend until smooth.
- Gently fold in chopped strawberries.
- Pour batter into a mini muffin pan, filling each cavity equally. Top with additional sliced strawberries and optional chocolate chips.
- Bake for about 15 minutes or until a toothpick inserted comes out clean.
