- ½ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup sour cream
- 2 large eggs
- ½ cup strawberry puree or jam
- 1 ½ cups crushed graham crackers or golden Oreos (for crust)
- ¼ cup unsalted butter (for crust)
- 1 cup crushed golden Oreos or vanilla wafers (for topping)
- ½ cup freeze-dried strawberries
Instructions
- Preheat the oven to 325°F (163°C). Prepare your mini muffin tin or an 8×8-inch pan with parchment paper.
- In a mixing bowl, combine crushed graham crackers with melted butter and press into the bottom of the prepared pan.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and strawberry puree until fully combined.
- Pour the cheesecake mixture over the crust and bake for 20–25 minutes (mini muffin tins) or 35–40 minutes (8×8-inch pan) until slightly jiggly in the center.
- Allow bites to cool at room temperature then refrigerate for at least four hours before adding the topping.
- For the topping, mix crushed golden Oreos with freeze-dried strawberries and melted butter; sprinkle over chilled cheesecake bites before serving.
