Instructions
- Prepare your water bath canner with simmering water and gather pint jars, lids, and bands.
- Puree cleaned strawberries in a food processor until smooth and transfer to a large saucepan.
- Add lemon juice and sugar to the strawberry puree, stirring well.
- Heat the mixture gently over medium heat until it reaches 190-200°F; skim off any foam.
- Fill hot jars with the heated concentrate, leaving 1/4 inch headspace. Secure lids fingertip tight.
- Process jars in boiling water for 15 minutes, then let cool undisturbed for 12-24 hours.
