  • 1/2 cup light brown sugar, packed
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 2 tablespoons granulated sugar or honey
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the strawberry filling: Combine strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla in a saucepan. Cook over medium heat until thickened (5–7 minutes), then set aside to cool.
  2. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  3. In a large bowl, mix oats, flour, brown sugar, baking powder, salt, and cinnamon.
  4. Cut in cold butter until the mixture resembles coarse crumbs.
  5. Stir in vanilla and optional sweeteners until just combined.
  6. Press about two-thirds of the crumble mixture into the prepared pan as the base.
  7. Spread the cooled strawberry filling evenly over the base.
  8. Sprinkle remaining crumble on top and press gently.
  9. Bake for 35–40 minutes until golden brown and bubbly at edges.
  10. Allow cooling completely before slicing into squares.
