- 2 cups fresh or frozen strawberries, chopped
- 1 1/2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/2 cup unsalted butter, cold and cut into cubes
- 2 tablespoons granulated sugar or honey
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the strawberry filling: Combine strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla in a saucepan. Cook over medium heat until thickened (5–7 minutes), then set aside to cool.
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix oats, flour, brown sugar, baking powder, salt, and cinnamon.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in vanilla and optional sweeteners until just combined.
- Press about two-thirds of the crumble mixture into the prepared pan as the base.
- Spread the cooled strawberry filling evenly over the base.
- Sprinkle remaining crumble on top and press gently.
- Bake for 35–40 minutes until golden brown and bubbly at edges.
- Allow cooling completely before slicing into squares.
