  • 16 oz mascarpone cheese
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 260 g ladyfingers
  • Freeze-dried strawberries (for dusting)

Instructions

  1. Prepare the Strawberry Syrup: In a saucepan, combine strawberries and water over low heat for 5 minutes. Mash the strawberries and strain through a fine sieve. Add sugar and lemon juice; simmer until thickened.
  2. Make the Mascarpone Filling: Whisk mascarpone with sugar and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks, then fold into mascarpone mixture along with cooled strawberry syrup.
  3. Assemble: Dip ladyfingers in syrup briefly, layer in serving dish, spread half of the filling over them, repeat layers, then refrigerate for at least 6 hours.
  4. Serve: Dust with freeze-dried strawberry powder and top with fresh strawberry slices before serving.
