- 4 cups strawberries
- ½ cup water
- ¾ cup granulated sugar
- 4 tablespoons lemon juice
- 1 ½ cups heavy cream
- 16 oz mascarpone cheese
- ¾ cup granulated sugar
- 2 teaspoons vanilla extract
- 260 g ladyfingers
- Freeze-dried strawberries (for dusting)
Instructions
- Prepare the Strawberry Syrup: In a saucepan, combine strawberries and water over low heat for 5 minutes. Mash the strawberries and strain through a fine sieve. Add sugar and lemon juice; simmer until thickened.
- Make the Mascarpone Filling: Whisk mascarpone with sugar and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks, then fold into mascarpone mixture along with cooled strawberry syrup.
- Assemble: Dip ladyfingers in syrup briefly, layer in serving dish, spread half of the filling over them, repeat layers, then refrigerate for at least 6 hours.
- Serve: Dust with freeze-dried strawberry powder and top with fresh strawberry slices before serving.
