Ingredients
- 1/2 lb whole grain pasta
- 2 grilled chicken breasts (chopped)
- 1/2 pint cherry tomatoes (halved)
- 1 medium zucchini (diced)
- 1/2 large cucumber (peeled and diced)
- 1/2 – 1 red bell pepper (diced)
- 8 oz Italian salad dressing
- Fresh basil (chopped)
Instructions
- Cook the whole grain pasta according to package directions until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine the chopped veggies and cooked pasta. Gently toss in the chopped chicken.
- In a small bowl, whisk together all dressing ingredients until well blended.
- Pour the dressing over the pasta mixture and toss until evenly coated.
- Garnish with additional fresh basil before serving.
