- 2 pounds fresh sweet potatoes
- 6 tablespoons granulated sugar
- 4 tablespoons melted unsalted butter
- 1/4 cup milk (dairy or plant-based)
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3 cups mini vegan marshmallows
Instructions
- Preheat oven to 400°F (200°C). Bake pricked sweet potatoes for 40-50 minutes until soft. Let cool.
- Lower oven temperature to 350°F (175°C). In a bowl, whisk together sugar, melted butter, milk, vanilla, and salt.
- Peel cooled sweet potatoes and mash them into the mixture. Stir in eggs until combined.
- Spread mixture in a baking dish and bake for about 20 minutes until heated.
- Scatter mini vegan marshmallows on top and bake an additional 5-10 minutes until toasted.
