Ingredients
- 6 hard-boiled eggs
- 8 ounces small pasta (such as ditalini or elbow macaroni)
- 3/4 cup mayonnaise
- 1 1/2 tablespoons dijon mustard
- 1 teaspoon white vinegar or lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 2 tablespoons finely diced red onion
- 2 tablespoons sliced green onions
Instructions
- Boil water in a pot with a pinch of salt. Add small pasta and cook according to package instructions until al dente. Drain using a colander and let cool.
- In a large mixing bowl, combine mayonnaise, dijon mustard, vinegar (or lemon juice), minced garlic, salt, smoked paprika, and cayenne pepper. Mix until smooth.
- Chop the hard-boiled eggs into small pieces and add them along with the cooled pasta to the dressing mixture. Stir in diced red onion and sliced green onions.
- Chill in the refrigerator for about 30 minutes before serving for enhanced flavors.
