  • 3/4 cup unsalted butter (cubed)
  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 egg yolk
  • 1 cup sugar
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Heat lemon juice until boiling, then reduce heat and simmer until reduced to about 2 tablespoons. Stir in butter until melted and set aside to cool.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, mix egg, egg yolk, sugar, lemon zest, and vanilla. Once cooled, stir in the lemon-butter mixture.
  4. Combine wet and dry ingredients until just mixed. Chill the dough for about 45 minutes.
  5. Preheat oven to 350°F (175°C). Roll out dough to about 1/8 inch thick and cut into rounds.
  6. Place on a parchment-lined baking sheet and bake for 6-7 minutes until lightly browned.
  7. Allow cooling on the sheet for a few minutes before transferring to a rack.
