- 1/2 cup lemon juice
- 3/4 cup unsalted butter (cubed)
- 2 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1 egg yolk
- 1 cup sugar
- 2 tablespoons lemon zest
- 1 teaspoon vanilla extract
Instructions
- Heat lemon juice until boiling, then reduce heat and simmer until reduced to about 2 tablespoons. Stir in butter until melted and set aside to cool.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, mix egg, egg yolk, sugar, lemon zest, and vanilla. Once cooled, stir in the lemon-butter mixture.
- Combine wet and dry ingredients until just mixed. Chill the dough for about 45 minutes.
- Preheat oven to 350°F (175°C). Roll out dough to about 1/8 inch thick and cut into rounds.
- Place on a parchment-lined baking sheet and bake for 6-7 minutes until lightly browned.
- Allow cooling on the sheet for a few minutes before transferring to a rack.
