  • 2 cups cooked chicken, diced
  • 8 oz rotini or bowtie pasta
  • 1 can (14 oz) pineapple tidbits, drained
  • 1 red bell pepper, diced
  • ½ cup shredded carrots (optional)
  • 2 green onions, sliced thin
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ⅓ cup reserved pineapple juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • Salt & pepper to taste

Instructions

  1. Cook pasta in salted water until tender. Drain and rinse with cold water.
  2. In a bowl, whisk together mayonnaise, sour cream, pineapple juice, mustard, vinegar, honey, garlic powder, salt, and pepper.
  3. In a large bowl, combine cooled pasta with chicken, pineapple, bell pepper, green onions, and carrots.
  4. Pour dressing over the mixture and gently fold until well coated.
  5. Chill in the refrigerator for at least one hour before serving.
