Ingredients
- 2 cups cooked chicken, diced
- 8 oz rotini or bowtie pasta
- 1 can (14 oz) pineapple tidbits, drained
- 1 red bell pepper, diced
- ½ cup shredded carrots (optional)
- 2 green onions, sliced thin
- ½ cup mayonnaise
- ¼ cup sour cream
- ⅓ cup reserved pineapple juice
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey
- ¼ teaspoon garlic powder
- Salt & pepper to taste
Instructions
- Cook pasta in salted water until tender. Drain and rinse with cold water.
- In a bowl, whisk together mayonnaise, sour cream, pineapple juice, mustard, vinegar, honey, garlic powder, salt, and pepper.
- In a large bowl, combine cooled pasta with chicken, pineapple, bell pepper, green onions, and carrots.
- Pour dressing over the mixture and gently fold until well coated.
- Chill in the refrigerator for at least one hour before serving.
