- 1 cup Dried Green Split Peas
- 1 piece Chicken Bone (meaty)
- 1 large Onion (chopped)
- 1 cup Chopped Carrot
- 1 cup Chopped Celery
- Salt and Pepper to taste
- 1 teaspoon Dried Thyme
- 1 Bay Leaf
Instructions
- Rinse the dried split peas under cold water and set aside.
- In a large pot over medium heat, sauté chopped onion until translucent (about 5 minutes).
- Add chopped carrots and celery; cook for another 5 minutes.
- Incorporate the rinsed split peas and chicken bone into the pot.
- Pour in enough water or broth to cover all ingredients (approximately 8 cups).
- Season with salt, pepper, thyme, and bay leaf. Bring to a boil.
- Reduce heat to low, cover, and let simmer for about 90 minutes or until peas are tender.
- Remove the chicken bone before serving, stir well, adjust seasoning if needed, and serve hot.
