Ingredients
- 2 1/2 pounds fresh peaches (peeled, pitted, and finely chopped)
- 1 medium red bell pepper (chopped)
- 1/2 cup sweet onion (chopped)
- 3/4 cup honey
- 1/2 cup apple cider vinegar
- 1 – 2 jalapeño peppers (chopped)
- 1 teaspoon dry mustard
- 1 teaspoon kosher salt
- 1 tablespoon garlic (chopped)
Instructions
- Peel the peaches easily by simmering them in water for two minutes, then transferring them to an ice bath.
- In a large Dutch oven, combine chopped peaches, red bell pepper, sweet onion, garlic, apple cider vinegar, honey, jalapeños, dry mustard, and salt.
- Bring the mixture to a boil over medium heat. Reduce heat to low and simmer uncovered for about 25 minutes until thickened.
- For a smoother texture, blend the sauce using an immersion blender or food processor.
